honey oat granola

Honey Oat Granola
5 c. oats (I use gluten free oats made from oat groats but we can talk about rolling your own oats later...)
1 c. slivered almonds
1 c. walnuts or pecans
1 c. coconut
½ c. ground flax meal
½ c. sesame seeds
½ c. sunflower seeds
1 T. cinnamon
2/3 c. oil
2/3 c. honey 
1 t. vanilla
1 c. raisins or dried fruit
Combine oats, nuts, seeds, coconut, flax and cinnamon.  In saucepan, combine oil and honey or maple syrup.  Cook and stir over medium heat until combined.  Remove from heat.  Stir in vanilla.  Drizzle oil mixture over granola mixture and toss to coat.  Spread in greased roasting pan, or 2 greased cookie sheets.  Bake in 325 oven for 40-45 min. or until lightly browned, stirring every 15 min.  Remove from oven and stir  in raisins.  Cool to room temp, stirring occasionally so as not to stick.  Store at room temp up to 2 wks, or freeze.  Serve with milk or yogurt.  
Or, just eat plain as an afternoon snack in a tree fort.

This recipe is so easy to tweak how you want it.  You can substitute oats for any ingredient you don't like or don't have.  Yesterday, I didn't use any of the seeds, but instead added another cup of oats.  You can also use pure maple syrup instead of honey, or a mixture of both.

  1. I've started making my own granola too- it's really similar to this. but I can't convince Emerson that it's good :) I add 1 cup of oat bran too, I think it makes it more filling- and a little less honey but I also add 1/2 cup of apple juice. I think I'll try adding coconut this week :)
