baked curry chicken

I have to give big thanks to my life group girls for introducing me to this recipe a year ago.  It's become a regular in our home because it's so yummy, the kids love it, and it is so easy to make.  I usually serve it with rice and broccoli, but I had some freshly dug sweet potatoes this week, so made sweet potato fries, seasoning them with curry powder and turmeric and garlic.  


Honey Curry Chicken
1 pkg. chicken breasts, filleted
¼ c. butter, melted
1/3 c. honey
2 T. Dijon mustard
1 t. salt
2 T. curry
1 T. minced garlic, or 1 t. garlic powder
Bake covered at 350 for 1 hr. 20 min.  Turn chicken halfway through.  I cut ours into strips in the sauce before serving.

They were a hit!  (I substituted sucanat for brown sugar and didn't use a full cup.  And topped with a different cream cheese frosting recipe)  I used to love baking muffins and bread, but it's taking me awhile to find gluten free versions that taste like "normal" ones.  These were an exception and made it onto my gratitude list at the end of the day :)

That gratitude list has helped me these days to not lose my mind.  I thought we were all clear yesterday, after Miles had 24 hrs. of no fever, so he went to school.  I got a call at 2.30 from the school nurse saying he had a fever.  Poor guy.  So, he's home again today.  I've got my card on the table ready to record His blessings today.  Because in my nature, I'm so ready to get out of this house!!! It's been 12 days!!!  But I've been reading in Acts, and realize that if Paul and Silas can sing and praise God in prison (Acts 16.25), I can praise Him in the midst of sickness and uncertainty.

  1. I love this blog! It's a little bit ann, a little bit soule mama, and a lotta sara. good job girl! I'm going to try the eggplant right away. I hate the long process...but you've made it a lot easier.
